You will need:
1 cup oatmeal (old fashioned)
1/2 cup peanut butter (or other nut butter)
1/3 cup honey (or 3 tbsp Agave Nectar and 3 tbsp honey)
1 cup unsweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Layer coconut flakes on non stick pan and place in oven at 325 degrees until lightly browned. Then, stir everything above in a medium bowl until well mixed.
Let chill in the refrigerator for half an hour. Once chilled, use a cookie dropper (or a spoon if you don't have one handy)! Store in an airtight container and keep
refrigerated for up to 1 week. Ours never last longer than a couple of days though ;)
